Apple and Honey Muffins

These muffins are great as a snack with a coffee; you don’t even think about the fact they’re very nutritious. They’re low fat and full of fibre and low-GI whole grains.

Preparation Time: 10 minutes
Cooking Time: 20 minutes

What you need
2 eggs
250g wholemeal plain flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
¾ cup low fat milk
4 tablespoons coconut oil
4 tablespoons honey
125g chopped apples

Directions
-Preheat oven to 190°C. Lightly grease one 12-cup muffin tin.
-Lightly beat eggs whites. In a separate bowl, mix dry ingredients thoroughly.
-In another bowl, mix milk, oil, honey and apples. Gently fold in egg whites to the wet mixture. Add the wet mix to the dry mix. Fold together until moistened.
-Fill greased muffins two-thirds full and bake for about 20 minutes until browned.
-Remove from tins and eat warm or cold.
