Vegetable Soup

This has been a favourite of Browny’s when his jaw hasn’t been in good shape to chew food. It’s great when the temperature’s a little bit cooler, and with winter coming, having all these vegies and garlic helps to keep you healthy!

Preparation Time: 5 minutes
Cooking Time: 35 minutes

What you need
1 large zucchini, chopped
3-4 carrots, chopped
1 cup uncooked cup brown rice
1 can of diced tomatoes
½ cauliflower
2 diced onions
1-2 tablespoons olive oil
2 tablespoons minced garlic
600mls vegetable stock
1 teaspoon oregano


Directions
Sauté garlic and onion in the olive oil in a saucepan.
Add carrots, zucchini, and cauliflower and soften slightly.
Add stock, rice, and tomatoes and bring to the boil.
Simmer for 35 minutes or until rice is soft. Add oregano and serve with slices of crusty bread.
