Tuna Salad

An ideal meal for lunch during pre-season. The weather is always hot in Brisbane, and you know there’ll be lots of running in the afternoon, so you want something nice and light.

Preparation Time: 5 minutes
Cooking Time: Nothing!

What you need
185g can of tuna (either in spring water or olive oil)
Baby spinach leaves
2 chopped tomatoes
½ chopped cucumber
¼ Finely chopped raw zucchini
¼ finely chopped red or green capsicum
10 or so olives
½ diced avocado
Lemon juice and a touch of olive oil to drizzle

Directions
Add tomatoes, capsicum, zucchini (you can hardly taste it-great way to up the veggie intake), cucumber and avo in a salad bowl and mix.
Pour in tuna and olives and lightly combine.
Finish with baby spinach leaves, toss together and drizzle with a little lemon juice and olive oil.
Serve and enjoy. If you want to up the carbohydrate intake, this is nice with cous cous.
