Chicken Fajitas

Let’s be honest, who doesn’t love a bit of Mexican!

With summer on the way, this is a great recipe to share with friends, better still, everyone can make their own.

2-4 (depending on how many fajitas you can eat)

Ingredients

2 large Free Range Chicken Breasts
Olive Oil
Salt and Pepper for seasoning
2 tsp of sweet paprika
1 red capsicum
1 large red onion
2 tomatoes
Bag of salad leaves
Jar of tomato salsa
2 avocadoes
1 lime
Bunch of fresh coriander
Packet of 8 whole wheat tortillas

Method
- Place griddle pan on the heat

- Place your chicken breast between two pieces of grease proof paper and bash with a rolling pin till they are even and about 2cm thick

- Season the chicken with salt and pepper, and sprinkle with paprika on both sides, drizzle a little oil on both sides and add to your pan

- Cook the chicken until golden brown and cooked through – this will take about 3-4min each side but make sure your test it is cook through

- Whilst the chicken is cooking slice your capsicum and half the red onion, add these to a separate pan with some olive oil and fry for a few minutes to get a bit of colour on them, then set aside in a bowl ready to serve

- Make a guacamole by peeling and deseeding your avocado, mash it in a bowl with a fork

- Finely dice 1 of the tomatoes, the other half of the red onion and add to the avocado

- Roughly chop the coriander and add to avocado along with salt and pepper and juice of a lime, mix everything together and serve in a bowl

- Once cooked, set your chicken aside to rest

- Lightly grill your tortillas in the griddle pan to warm them through, once grilled wrap them in some aluminium foil to keep them warm

- Slice your other tomato and serve in a bowl

- Add your salad leaves and tomato salsa to a bowls to serve

- Finally slice your chicken breast into strips and serve

- Let everyone help themselves to what they want in their fajita
